The roast was a pork loin centre roast, about 3 lbs and was done
after 1 hr and 20 mins. Can used 1/2 c onion instead of the 1/4 c and
1 tsp Tabasco. Also added fresh ground pepper. It was very moist
and tender.
Can had it with baked potatoes, cornbread dressing, salad, carrots,
yellow beans and for dessert Clodhoppers ice cream and vanilla for
Amanda.
Its enough leftover for at least 2 dinners and a couple sandwiches.
