Pork Dumplings

Pork Dumplings

Ingredient
1 pkg. won ton wrappers

Filling
3 med. black mushrooms
6 c. pork fillet
1 c. pork fat

Marinade
1 T. light soy sauce
1/2 tsp. sugar
1/2 tsp. sesame oil
1/2 tsp. pepper
1 tsp. Chinese Yellow wine
1 T. white cornflour
1 tsp. salt

Soak the black mushroom in hot water for 30 mins.
Cut off and discard the stems, and finely dice
the caps.

Cut the fillet of pork fat into small cubes, and
mix the pork and mushroom pieces with the marinade
ingredients, stirring with a fork until the mixture
becomes sticky.

Place 1 wrapper in the palm of your hand.

Put 1 tsp. of filling in the center of the wrapper,
and squeeze the edges gently together, until it looks
like a change-purse, but leave the top open.

Continue until all the wrappers are filled. Put
dumplings in a steamer, over a high heat for
10-15 mins. Serve hot.

Note:
You may substitute chicken, shrimp, or crab
for the pork.
